Preparation
- Begin by boiling a pot of salted water and cooking the pasta according to package directions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 3–4 minutes. Then, toss in the garlic and mushrooms, cooking until tender and fragrant.
- Pour the chicken broth and heavy cream into the skillet. Let it simmer for about 5 minutes, letting the flavors meld together. Add Italian seasoning, salt, and pepper to taste.
- In a large mixing bowl, combine the cooked pasta, sautéed vegetables, shredded chicken, and 1 cup of the cheese. Stir it all together until well mixed.
- Grease a 9×13 inch baking dish and pour the pasta mixture into it, spreading it evenly.
- Sprinkle the remaining cheese over the top.
- Preheat your oven to 350°F (175°C) and bake uncovered for 30 minutes until the cheese is bubbly and golden brown.
Notes
For added nutrients, consider adding spinach, asparagus, or bell peppers. Experiment with cheese options and add red pepper flakes for some heat. Fresh herbs like basil or parsley can elevate the flavor.
