Liquid Ingredients
  • 2 cups chicken broth Use low-sodium broth for better control over saltiness.
  • 1 can (15 oz) diced tomatoes Use no-salt-added for a healthier option.
Seasoning
  • 1 tablespoon Worcestershire sauce For a tangy kick.
  • 1 tablespoon apple cider vinegar Enhances flavor depth.
  • Salt and pepper to taste Essential for balance.
  • Optional spices (cayenne or smoked paprika) Add for heat or extra smokiness.

Method
 

Preparation
  1. In a large pot, heat a splash of olive oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic until fragrant, about 1 minute.
Cooking
  1. Incorporate the chopped smoked pork and chicken. Stir until the meats begin to get a slight color, about 5 minutes.
  2. Add the diced tomatoes (juice and all) and mix well, scraping up any delicious bits stuck to the pot.
  3. Pour in the chicken broth and add the corn.
  4. Stir in the Worcestershire sauce, apple cider vinegar, salt, and pepper. Let the mixture come to a gentle boil.
  5. Lower the heat and let your stew simmer uncovered for 45 minutes, stirring occasionally.
Serving
  1. Before serving, taste and adjust the seasoning as necessary.
  2. The stew can be served right away, but it tastes even better the next day!

Notes

For added nutrition, consider throwing in some kale or spinach towards the end of cooking. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze portions for up to 3 months.
