Method
 

Preparation
  1. In a large skillet over medium heat, add a splash of oil. Toss in the diced onion and sauté for 3-5 minutes, until translucent.
  2. Stir in the minced garlic and cook for about 1 minute.
  3. Add the ground beef to the pan, breaking it apart with a spatula. Cook until browned, about 5-7 minutes, stirring occasionally.
  4. Sprinkle in the chili powder, cumin, paprika, salt, and pepper. Stir well and cook for another 2 minutes.
  5. While the beef is cooking, warm your tortillas in a separate skillet for a few seconds per side.
Assembly
  1. Spoon the beef mixture into tortillas and pile high with your favorite toppings.
  2. Set the table and let everyone dig in.

Notes

Store any unused beef mixture in an airtight container in the refrigerator for up to 3 days. Reheat on the stove, or freeze for up to 3 months.
