Preparation
- In a large skillet over medium heat, add a splash of oil. Toss in the diced onion and sauté for 3-5 minutes, until translucent.
- Stir in the minced garlic and cook for about 1 minute.
- Add the ground beef to the pan, breaking it apart with a spatula. Cook until browned, about 5-7 minutes, stirring occasionally.
- Sprinkle in the chili powder, cumin, paprika, salt, and pepper. Stir well and cook for another 2 minutes.
- While the beef is cooking, warm your tortillas in a separate skillet for a few seconds per side.
Assembly
- Spoon the beef mixture into tortillas and pile high with your favorite toppings.
- Set the table and let everyone dig in.
Notes
Store any unused beef mixture in an airtight container in the refrigerator for up to 3 days. Reheat on the stove, or freeze for up to 3 months.
