Preparation
  1. Preheat your oven to 350°F (175°C) to ensure the bake gets a perfect golden crust.
  2. In a skillet over medium heat, sauté the diced onions and chopped bell peppers until they are soft and sweet, about 5 minutes.
  3. In a large mixing bowl, whisk together the eggs and cottage cheese until smooth. Stir in the baking powder, salt, and pepper to create a creamy mixture.
  4. Fold in the sautéed onions and peppers, along with the spinach.
  5. Pour the mixture into a greased baking dish and top with a generous sprinkle of cheddar cheese.
  6. Bake for about 30 minutes, or until the center is set and the top is beautifully golden.
  7. Let it cool for a few minutes before slicing and serve warm.

Notes
