Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the bacon until it’s crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain the excess fat, keeping 1 tablespoon of the bacon drippings in the skillet.
  3. Season the chicken breasts with salt and pepper. In the same skillet, add the olive oil and sear the chicken for 3-4 minutes on each side until golden brown.
  4. Once the chicken is seared, brush the BBQ sauce generously over each piece.
  5. Crumble the crispy bacon on top of each chicken breast, then sprinkle with shredded cheddar cheese.
  6. Transfer the chicken to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through (internal temperature should reach 165°F/75°C).
  7. Before serving, add fresh herbs for a pop of color and freshness.

Notes

For a lighter option, swap chicken breasts for chicken thighs or use turkey bacon instead of pork bacon. Try adding sautéed bell peppers or corn for a veggie-packed dish.
