Preparation
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, cook the bacon until it’s crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain the excess fat, keeping 1 tablespoon of the bacon drippings in the skillet.
- Season the chicken breasts with salt and pepper. In the same skillet, add the olive oil and sear the chicken for 3-4 minutes on each side until golden brown.
- Once the chicken is seared, brush the BBQ sauce generously over each piece.
- Crumble the crispy bacon on top of each chicken breast, then sprinkle with shredded cheddar cheese.
- Transfer the chicken to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through (internal temperature should reach 165°F/75°C).
- Before serving, add fresh herbs for a pop of color and freshness.
Notes
For a lighter option, swap chicken breasts for chicken thighs or use turkey bacon instead of pork bacon. Try adding sautéed bell peppers or corn for a veggie-packed dish.
