  • 1 lb Italian Sausage Mild or spicy, or substitute with chicken sausage.
  • 2 cups Kale, chopped Can substitute with spinach or Swiss chard.
  • 2 cups Potatoes, diced Russet or Yukon gold preferred; sweet potatoes are an alternative.
  • 1 large Onion, chopped Shallots can be used for a milder flavor.
  • 3 cloves Garlic, minced Can replace with 1 teaspoon of garlic powder if needed.
  • 4 cups Chicken Broth Use low-sodium broth or substitute with vegetable broth for a vegetarian option.
  • 1 cup Carrots, diced Parsnips can be substituted for an earthier touch.
Seasonings

  • 1 teaspoon Thyme Fresh herbs are welcome.

Method
 

Preparation
  1. Brown the sausage in a large skillet over medium heat until browned. Drain excess grease.
  2. Chop the kale, potatoes, carrots, and onion while the sausage cooks.
Cooking
  1. In the crockpot, combine the browned sausage, chopped vegetables, minced garlic, and seasonings.
  2. Pour in the chicken broth and stir gently to combine.
  3. Set the crockpot to low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, taste and adjust seasonings as necessary.
Serving
  1. Ladle the soup into bowls and serve with crusty bread.

Notes

For creative swaps, use diced chicken or turkey for a leaner version. Add beans for extra protein. Consider garnishing with sour cream, parmesan cheese, or hot sauce when serving.
