  • 4 cups Broth Chicken or vegetable broth enhances the depth of flavor (low-sodium options work too).
  • 1 large Onion, chopped Sweet or yellow onion brings lovely aromatics.
  • 3 cloves Garlic, minced Fresh garlic infuses the soup with a warm aroma.
  • 2 medium Carrots, diced They lend natural sweetness and color.
Seasonings
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Dried thyme

Preparation
  1. Begin by browning the sausage in a skillet over medium heat until it’s nicely browned and cooked through.
  2. In your crockpot, layer the potatoes, onion, garlic, and carrots.
  3. Add the cooked sausage on top of the veggies.
  4. Pour in the broth, then season with salt, pepper, thyme, and red pepper flakes.
  5. Stir gently, and then top with chopped kale.
Cooking
  1. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  2. Before serving, give it a good stir, adjust seasonings to taste, and enjoy!

Notes

For a creamy texture, stir in some coconut milk or heavy cream just before serving. Feel free to add diced tomatoes or cannellini beans for heartiness. Use different sausages, and add fresh herbs like parsley just before serving for freshness.
