Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a skillet over medium heat, brown the ground turkey until no longer pink. Drain any excess fat.
- Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Mix well and let it cook for about 5 minutes.
- Layer the cooked rice into the greased baking dish, followed by the meat mixture.
- Spread the sour cream evenly over the meat layer.
- Top with the shredded cheese.
Cooking
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and allow to cool slightly before garnishing with green onions or cilantro.
Notes
