Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, brown the ground turkey until no longer pink. Drain any excess fat.
  3. Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Mix well and let it cook for about 5 minutes.
  4. Layer the cooked rice into the greased baking dish, followed by the meat mixture.
  5. Spread the sour cream evenly over the meat layer.
  6. Top with the shredded cheese.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  2. Remove from the oven and allow to cool slightly before garnishing with green onions or cilantro.
