Method
 

Preparation
  1. Wash and slice the cucumbers into thin half-moons.
  2. Julienne the carrot and thinly slice the green onions.
Make the Dressing
  1. In a bowl, whisk together the Greek yogurt, tahini, rice vinegar, soy sauce, honey, sesame oil, minced garlic, and grated ginger until smooth.
  2. Taste and adjust as needed with more vinegar or honey.
Combine Ingredients
  1. Combine the cucumbers, carrots, and green onions in a large bowl.
  2. Pour the dressing over and gently toss until evenly coated.
Finish and Serve
  1. Stir in the chopped cilantro if using, and sprinkle toasted sesame seeds over the top.
  2. Let it sit for 5 to 10 minutes before serving to allow flavors to meld.
  3. Spoon into bowls and enjoy immediately or chill for an hour.

Notes

For a spicy kick, add a teaspoon of sriracha. To make it creamier, fold in a tablespoon of mayonnaise. You can also let guests personalize their servings with toppings.
