  • 1/2 cup Parmesan Cheese, grated Adds a cheesy finish to the sauce; can swap with nutritional yeast for dairy-free.
  • Salt and Pepper, to taste Brings the entire ensemble together.

Method
 

Preparation
  1. Season both sides of the chicken breasts with salt and pepper.
  2. In a large skillet, heat the olive oil and one tablespoon of butter over medium-high heat until shimmering.
Cooking
  1. Add the chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove from the pan and set aside.
  2. In the same skillet, add the minced garlic and cook for 1 minute, stirring frequently until fragrant. Be careful not to burn it!
  3. Pour in the heavy cream and chicken broth, stirring to combine. Let it simmer for 3-5 minutes, thickening slightly.
  4. Add the grated Parmesan cheese, and mix until melted and creamy. Check the seasonings and adjust with salt and pepper as needed.
  5. Return the chicken to the skillet, allowing it to soak up the delicious sauce for a minute. Garnish with fresh parsley and serve warm.

Notes

You can try different proteins such as turkey or shrimp, add vegetables like spinach or sun-dried tomatoes, or make a dairy-free version with coconut cream and nutritional yeast. Squeeze fresh lemon juice before serving for added brightness.
