Preparation
- Season both sides of the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil and one tablespoon of butter over medium-high heat until shimmering.
Cooking
- Add the chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove from the pan and set aside.
- In the same skillet, add the minced garlic and cook for 1 minute, stirring frequently until fragrant. Be careful not to burn it!
- Pour in the heavy cream and chicken broth, stirring to combine. Let it simmer for 3-5 minutes, thickening slightly.
- Add the grated Parmesan cheese, and mix until melted and creamy. Check the seasonings and adjust with salt and pepper as needed.
- Return the chicken to the skillet, allowing it to soak up the delicious sauce for a minute. Garnish with fresh parsley and serve warm.
Notes
You can try different proteins such as turkey or shrimp, add vegetables like spinach or sun-dried tomatoes, or make a dairy-free version with coconut cream and nutritional yeast. Squeeze fresh lemon juice before serving for added brightness.
