Method
Cooking the Pasta
- In a large pot, bring salted water to a boil and cook your pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
Making the Sauce
- In a large skillet, melt butter and olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it brown.
- Lower the heat and carefully pour in the heavy cream. Stir to combine, letting it heat gently until silky.
- Add the grated Parmesan cheese, stirring constantly until it melts into the sauce. Use reserved pasta water as needed for consistency.
Combining and Serving
- Toss the cooked pasta into the creamy sauce, folding gently to coat. Season with salt and pepper to taste.
- Transfer to a serving dish, sprinkle with fresh parsley, and serve warm.
Notes
For added nutrition, toss in sautéed spinach, cherry tomatoes, or grilled chicken. Store leftovers in an airtight container for up to 3 days.
