Ingredients

Main ingredients
  • 1 cup Orzo pasta Rice-shaped pasta that cooks quickly.
  • 1 pound Shrimp Fresh or frozen; ensure thawed before cooking.
  • 2 cups Broccoli florets Can substitute with green beans or asparagus.
  • 1 cup Heavy cream Can use lighter cream or coconut milk for a healthier option.
  • 2 cloves Garlic Minced for flavor enhancement.
  • 1/2 cup Parmesan cheese Alternatively use nutritional yeast for a dairy-free option.
  • 2 tablespoons Olive oil For sautéing, vegetable oil can be swapped if preferred.
  • 2 tablespoons Butter Adds richness to the dish.

Method

Preparation
  1. Begin by boiling water in a pot. Add a pinch of salt and pour in the orzo. Cook according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, but be careful not to burn it!
Cooking
  1. Toss in the broccoli florets and cook for 3-5 minutes, stirring occasionally.
  2. Add the shrimp to the skillet, cooking for about 3-5 minutes until pink and cooked through.
  3. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, allowing it to melt into a creamy sauce.
  4. Introduce the cooked orzo into the skillet, stirring everything together until perfectly combined. Season with salt and pepper to taste.
Serving
  1. Plate your creamy orzo shrimp and broccoli immediately, garnishing with extra Parmesan and fresh parsley if desired.

Notes

For variations, consider adding red pepper flakes for heat, spinach or sun-dried tomatoes for added flavor, or switch shrimp for chicken, adjusting cooking time as necessary.
