Ingredients
  

Pasta and Sauce Ingredients
  • 8 oz Pasta (penne, fettuccine, or spaghetti) Choose whole grain for a healthier option.
  • 2 tbsp Olive Oil For sautéing.
  • 3 cloves Garlic, minced Add more if desired.
  • 4 cups Mixed Vegetables (bell peppers, zucchini, carrots, peas) Fresh or frozen works.
  • 1 cup Heavy Cream Can substitute with half-and-half or milk.
  • 1/2 cup Parmesan Cheese, grated Use freshly grated for best flavor.
  • to taste Salt and Pepper Key for seasoning.
  • 1/4 cup Fresh Basil, chopped For garnish.

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
Sautéing Ingredients
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic, and sauté for about 1 minute.
  2. Toss in your mixed vegetables and stir-fry for 3-5 minutes until they are tender yet still crisp.
Making it Creamy
  1. Lower the heat and pour in the heavy cream, stirring gently to combine. Let it simmer until it thickens. Add pasta water if it seems too thick.
Combining and Seasoning
  1. Add the drained pasta to the skillet and toss everything together.
  2. Stir in the grated Parmesan cheese, salt, and pepper to taste. Toss in chopped fresh basil.
Serving the Dish
  1. Plate your Creamy Pasta Primavera and garnish with more cheese and basil. Enjoy!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. For longer storage, freeze in a safe container for up to 2 months.
