  • 1 can (15 oz) Black Beans, drained and rinsed Provides protein and fiber.
  • 1 can (15 oz) Corn, drained Adds sweetness and texture.
  • 1 cup Chicken or Vegetable Broth For a rich soup base.
  • 1 cup Heavy Cream Substitute with Greek yogurt for a lighter option.
  • Salt and Pepper to taste To round out flavors.

Preparation
  1. In a large pot, heat a bit of olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5 minutes, until they soften.
  2. Push the veggies to the side and add the ground beef (or turkey). Cook until browned, breaking it apart with a wooden spoon. Season with salt, pepper, and half the taco seasoning.
  3. Stir in the diced tomatoes, black beans, corn, broth, and the remaining taco seasoning. Allow the mixture to come to a gentle simmer.
  4. Once everything is hot and bubbly, reduce the heat and stir in the heavy cream.
  5. Give it a taste! Feel free to add more salt or taco seasoning as needed. Let it simmer for another 10 minutes.
  6. Ladle the Creamy Taco Soup into bowls and top with your favorite garnishes.

Notes

For extra spice, add jalapeños or a splash of hot sauce. Consider using chickpeas instead of black beans or adding diced zucchini for variation. Always add cream at the end to prevent curdling.
