Cooking Pasta
- Boil a large pot of salted water. Add pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
Making the Sauce
- In a large skillet over medium heat, heat olive oil. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in canned diced tomatoes (with juices) and stir. Simmer for 5-7 minutes.
- Lower the heat and stir in heavy cream. Let it simmer for another 2-3 minutes until creamy.
- Toss the cooked pasta into the skillet with the sauce. Add reserved pasta water to achieve desired consistency.
- Season with basil, salt, and pepper to taste. Serve hot topped with Parmesan if desired.
