Preparation
  1. Begin by heating olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning. Sear them in the pan for about 6-7 minutes on each side, until they are golden brown.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Stir in the sun-dried tomatoes and spinach, letting the spinach wilt for about 2 minutes.
  6. Pour in the heavy cream and add the Parmesan cheese, stirring until melted and creamy.
  7. Return the chicken to the skillet, allowing it to soak in all the creamy goodness for 5 minutes.
  8. Serve hot, drizzling the sauce over the chicken.

Notes

Flavor twists include adding lemon juice for brightness or fresh herbs like basil or parsley at the end. You can use Greek yogurt instead of heavy cream for a healthier option.
