Ingredients
  

Vegetables
  • 2 cups chopped carrots You can swap in seasonal vegetables.
  • 1 cup chopped celery
  • 2 cups diced potatoes Feel free to use sweet potatoes.
Aromatics
  • 1 medium onion, diced
  • 2 cloves garlic, minced
Liquids
  • 4 cups vegetable broth Choose low-sodium for a healthier option.
  • 1 cup heavy cream Substitute with coconut milk for a dairy-free option.
Herbs & Seasoning
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Adjust to taste.
  • 2 teaspoons fresh thyme Dried herbs can be used as well.
  • 2 teaspoons fresh parsley Use dried if fresh is not available.

Method
 

Preparation
  1. In a large pot over medium heat, swirl in a tablespoon of olive oil. Add diced onions and minced garlic. Sauté for about 3-5 minutes until they are translucent and fragrant.
  2. Toss in chopped carrots, celery, and potatoes, then stir to combine and let soak in the garlicky goodness for another 5-7 minutes.
Cooking
  1. Carefully add vegetable broth to the pot, bringing it to a gentle simmer. Allow the soup to bubble and the vegetables to soften.
  2. Season with salt, pepper, and herbs of choice. Allow to simmer for 15-20 minutes, or until vegetables are tender.
  3. Use an immersion blender to puree the soup to your desired consistency, then stir in the heavy cream.
  4. Taste and adjust the seasoning if necessary before serving.

Notes

For added nutrition, fold in spinach or kale. Spicing it up with cayenne or crushed red pepper flakes can add a delightful kick. Serve with crusty bread or a light salad for a complete meal.
