Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and a pinch of salt.
  3. In another bowl, combine the granulated sugar, brown sugar, and eggs. Beat until light and fluffy, about 2-3 minutes.
  4. Pour in the vanilla extract and mix well.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Chill the dough for about 15 minutes in the fridge.
  7. Scoop tablespoons of dough and roll them into balls. Roll each ball in powdered sugar.
  8. Place the cookies on the prepared baking sheets, leaving space between each.
Baking
  1. Bake for 10-12 minutes until cookies crinkle and puff slightly.
  2. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Experiment with flavors by adding chocolate chips, nuts, or spices. Don’t skip the chilling step for the best texture.
