Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and a pinch of salt.
- In another bowl, combine the granulated sugar, brown sugar, and eggs. Beat until light and fluffy, about 2-3 minutes.
- Pour in the vanilla extract and mix well.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Chill the dough for about 15 minutes in the fridge.
- Scoop tablespoons of dough and roll them into balls. Roll each ball in powdered sugar.
- Place the cookies on the prepared baking sheets, leaving space between each.
Baking
- Bake for 10-12 minutes until cookies crinkle and puff slightly.
- Let them cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Experiment with flavors by adding chocolate chips, nuts, or spices. Don’t skip the chilling step for the best texture.
