Preparation
- Dice the chicken breasts into bite-sized pieces. Season with garlic powder, paprika, salt, and pepper.
Cooking
- Spray the air fryer basket lightly with olive oil, then add the seasoned chicken. Cook at 380°F for about 10-12 minutes, shaking halfway through.
- While the chicken is cooking, warm the tortillas in a pan for a few seconds on each side until they are pliable.
- Once the chicken is cooked through, take a warm tortilla, add a portion of chicken and a sprinkle of mozzarella cheese. If using veggies, add them now too.
- Fold the sides of the tortilla inward and roll it up tightly, ensuring to keep all the filling inside.
- Place the wraps seam-side down in the air fryer basket. Spray lightly with olive oil and cook for an additional 5-7 minutes at 380°F until crispy.
Serving
- Remove from the air fryer, let them cool slightly, and then slice in half to reveal the melty mozzarella inside.
Notes
These wraps are great for meal prep! Store un-cooked wraps in the fridge for up to two days. Leftovers can be stored in an airtight container in the refrigerator for 1-2 days; reheat in the air fryer.
