  • 4 medium Potatoes Your choice (Russets work great)
  • 1 cup Shredded cheese Cheddar recommended, dairy-free if preferred
  • 2 tablespoons Butter Or use olive oil for a healthier option
  • 1 cup Breadcrumbs For crunch
  • 1 large Egg For binding; flaxseed egg for vegan version
  • Seasonings Salt, pepper, and herbs to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the potatoes, then boil them in salted water until tender, about 15 minutes.
  3. Drain the potatoes and mash them with butter and seasonings until smooth.
  4. Stir in the shredded cheese until well combined.
  5. Set up a station with the beaten egg and breadcrumbs.
  6. Form small portions of the potato mixture into bite-sized balls, dip each in egg, and roll in breadcrumbs.
  7. Place the bites on a lined baking sheet and bake for about 20-25 minutes, until golden brown and crispy.

Notes

Feel free to add sautéed veggies or spices for variations. Serve with dipping sauces for added flavor.
