Preparation
- Preheat your oven to 400°F (200°C).
- Peel and cube the potatoes, then boil them in salted water until tender, about 15 minutes.
- Drain the potatoes and mash them with butter and seasonings until smooth.
- Stir in the shredded cheese until well combined.
- Set up a station with the beaten egg and breadcrumbs.
- Form small portions of the potato mixture into bite-sized balls, dip each in egg, and roll in breadcrumbs.
- Place the bites on a lined baking sheet and bake for about 20-25 minutes, until golden brown and crispy.
