  • 1 cup breadcrumbs Panko or regular breadcrumbs for a crunchy coating.

Preparation
  1. If using leftover mashed potatoes, make sure they are at room temperature. If making fresh, prepare them until they’re creamy and delicious.
Mixing
  1. In a large bowl, combine the mashed potatoes, shredded cheese, egg, green onions (if using), salt, and pepper. Stir until everything is well mixed and creamy.
Shaping
  1. Using your hands (you might want to dust them with flour), form small balls or patties from the mixture—about the size of a golf ball works great.
Coating
  1. Roll each ball in flour, then dip into some beaten egg, and finally coat with breadcrumbs until they’re fully covered.
Frying
  1. Heat oil in a skillet over medium heat. Once hot, add the puffs a few at a time, ensuring not to overcrowd the pan. Cook for about 3-4 minutes on each side or until they’re golden and crispy.
Serving
  1. Remove them from the skillet and let them drain on a plate lined with paper towels. Serve warm and enjoy that cheesy, crispy goodness!

Notes

For added flavor, consider mixing in cooked bacon bits or jalapeños. Baking instead of frying is also an option; spray with olive oil and bake at 400°F (200°C) for about 20-25 minutes until golden brown.
