- Pat the beef dry and season with salt, pepper, and half the Italian seasoning. Heat olive oil in a skillet over medium-high heat and sear the beef strips just until browned.
- Transfer the seared beef to the crock pot. Add the sliced onion, bell pepper, garlic, Worcestershire sauce, and remaining Italian seasoning. Pour in the beef broth.
Cooking
- Cover and cook on low for 3 to 4 hours (or high for 2 to 3 hours) until the vegetables are tender and flavors have married.
- About 20 minutes before serving, stir in the heavy cream and add the tortellini. Press cheese slices into the mixture and top with shredded provolone if using.
- Cover and let the cheese melt and the tortellini finish cooking.
- Gently stir to create a creamy sauce coating every tortellini and strip of beef. Taste and adjust seasoning with salt and pepper. Serve immediately.
Notes
For healthier options, consider using ground turkey or thinly sliced chicken breast. You can also substitute full-fat dairy with reduced-fat cream or alternative dairy options.
