  • 2 cups Mixed vegetables (peas, carrots, corn) Adds color and vitamins to the filling.
  • 1 can Cream of chicken soup Creates the essential creaminess.
  • 1 cup Chicken broth Enhances flavor and keeps it moist.
  • 1 teaspoon Garlic powder Adds depth of flavor.
  • 1 teaspoon Onion powder Enhances the overall taste.
  • 1 teaspoon Salt Essential seasoning.
  • 1 teaspoon Pepper Essential seasoning.
  • 1 piece Pie crust For a golden, flaky topping; store-bought or homemade.

Method
 

Preparation
  1. Place the chicken breasts at the bottom of your crockpot and season with salt and pepper.
  2. Add the mixed vegetables over the chicken.
  3. In a bowl, whisk together the cream of chicken soup and chicken broth until smooth, then pour over the mixture in the crockpot.
  4. Sprinkle garlic powder and onion powder on top.
Cooking
  1. Cover and cook on low for 6 to 8 hours, or high for 3 to 4 hours.
  2. About 30 minutes before serving, prepare your pie crust according to package directions.
  3. Once the filling is cooked, spoon it into a baking dish, top with the crust, and bake until golden brown.

Notes

Feel free to use leftover rotisserie chicken or swap in frozen vegetables for convenience. Add fresh herbs or change up the veggies based on your preference.
