Preparation
  1. Slice your mushrooms, dice the onion, and mince the garlic.
  2. Place the chicken breasts at the bottom of your crock pot. Sprinkle with salt and pepper.
Cooking
  1. In a skillet, add a splash of oil over medium heat, then sauté the onions and garlic until fragrant, about 2-3 minutes.
  2. Add the mushrooms and cook for another 5 minutes until they begin to soften.
  3. In a bowl, whisk together the cream of mushroom soup, chicken broth, and sour cream until smooth.
  4. Pour the creamy mixture over the chicken, mushrooms, onions, and garlic in the crock pot.
  5. Cover and let cook on low for 4-6 hours, or on high for 2-3 hours.
  6. Once cooked, use two forks to shred the chicken, mix it with the sauce, and garnish with fresh parsley.
