- Begin by heating a tablespoon of oil in a skillet over medium heat. Sauté the chopped onion until translucent, then add the minced garlic.
- In the same skillet, sear the pieces of beef until browned on all sides to lock in flavor.
- Transfer the seared beef, sautéed onions, and garlic into your crockpot. Sprinkle with paprika, and add sliced mushrooms, beef broth, and Worcestershire sauce. Season with salt and pepper.
- Gently stir to ensure the beef is submerged in the broth. Cover and set your crockpot to low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the sour cream and let it heat through.
- Serve over egg noodles, rice, or mashed potatoes, topped with fresh parsley.
