  • 2 pounds beef stew meat or chuck roast sliced into bite-sized pieces
  • 1 medium onion, finely chopped for sweetness
  • 3 cloves garlic, minced bring on the flavor!
  • 8 ounces mushrooms, sliced use button or cremini for a deeper taste
  • 2 cups beef broth to keep it moist and hearty
  • 2 tablespoons Worcestershire sauce for that umami kick
  • 1 teaspoon paprika smoked paprika works wonderfully here
  • 1 cup sour cream rich and creamy indulgence
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. Begin by heating a tablespoon of oil in a skillet over medium heat. Sauté the chopped onion until translucent, then add the minced garlic.
  2. In the same skillet, sear the pieces of beef until browned on all sides to lock in flavor.
  3. Transfer the seared beef, sautéed onions, and garlic into your crockpot. Sprinkle with paprika, and add sliced mushrooms, beef broth, and Worcestershire sauce. Season with salt and pepper.
  4. Gently stir to ensure the beef is submerged in the broth. Cover and set your crockpot to low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the sour cream and let it heat through.
  6. Serve over egg noodles, rice, or mashed potatoes, topped with fresh parsley.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
