  • 1 can Coconut Milk (13.5 oz) For that rich, creamy texture.
  • 1/4 cup Lime Juice, freshly squeezed Brightens up the flavors.
  • 4 cloves Garlic, minced Adds depth of flavor.
  • 1 tablespoon Ginger, grated Provides warmth to balance the dish.
  • 2 tablespoons Soy Sauce Adds umami and saltiness.
  • 2 tablespoons Honey For sweetness; can substitute with maple syrup.
  • 1 cup Peppers, diced Feel free to swap for whatever vegetables you have.
  • 1 cup Onions, diced Use any veggies available.

Method
 

Preparation
  1. Start by placing the chicken breast in the bottom of your crockpot.
  2. In a separate bowl, whisk together the coconut milk, lime juice, garlic, ginger, soy sauce, and honey until smooth.
  3. Pour this mixture over the chicken, ensuring every piece is well-coated.
  4. Toss in your diced peppers and onions on top of the chicken.
  5. Cover and set your crockpot to low for 6-8 hours, or high for 4-5 hours.
  6. When the chicken is tender and cooked through, shred it with two forks right in the pot, and stir to fuse the flavors.

Notes

Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months. Add fresh herbs for garnish and try cooking rice with coconut water for extra flavor.
