  • 2 tablespoons Dijon mustard Brightens the flavors.
  • 1 teaspoon dried thyme (or a tablespoon fresh thyme) Aromatic and classic.

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish with melted butter.
  2. Tear the croissants into bite-sized pieces and layer about two-thirds of them in the dish.
  3. Scatter the cheese, ham (or vegetables), and caramelized onion evenly over the croissant layer.
  4. In a bowl, whisk eggs, milk, Dijon mustard, thyme, salt, pepper, and nutmeg until smooth.
  5. Pour the custard over the croissant layers, gently pressing down to absorb the liquid.
  6. Sprinkle remaining croissant pieces on top and brush melted butter over it.
  7. Bake for 30-35 minutes until puffed and golden; let it rest for 5-10 minutes before serving.

Notes

Make-ahead: assemble in the baking dish and refrigerate overnight. Leftovers can be stored for up to 3 days.
