Preparation
- Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish with melted butter.
- Tear the croissants into bite-sized pieces and layer about two-thirds of them in the dish.
- Scatter the cheese, ham (or vegetables), and caramelized onion evenly over the croissant layer.
- In a bowl, whisk eggs, milk, Dijon mustard, thyme, salt, pepper, and nutmeg until smooth.
- Pour the custard over the croissant layers, gently pressing down to absorb the liquid.
- Sprinkle remaining croissant pieces on top and brush melted butter over it.
- Bake for 30-35 minutes until puffed and golden; let it rest for 5-10 minutes before serving.
Notes
Make-ahead: assemble in the baking dish and refrigerate overnight. Leftovers can be stored for up to 3 days.
