- Slice the cucumbers and pat them dry. Lay the cucumber rounds on a large platter.
- In a bowl, mix cottage cheese with lemon juice, lemon zest (if using), chopped dill, and chives. Season gently with salt and pepper.
- Spoon a heaping teaspoon of the cottage cheese mixture onto each cucumber round.
- Top each bite with your choice of garnish.
- Chill briefly or serve immediately.
Notes
For a festive meal twist, add balsamic glaze and basil. Make them spicy with red pepper flakes or jalapeƱo slices. Store mixture for up to 3 days, and assemble just before serving.
