- In a medium saucepan, combine the rolled oats, milk, and a pinch of salt. Bring to a gentle boil over medium heat, stirring occasionally to avoid sticking.
- Once boiling, reduce heat to low and let it simmer gently for about 5 minutes, stirring often until it thickens to your desired consistency.
- While the oats simmer, whisk the eggs, maple syrup, and vanilla in a small bowl until well combined.
- Slowly add a ladleful of the hot oatmeal mixture into the egg mixture while continuously whisking to prevent the eggs from scrambling.
- Pour the egg mixture back into the saucepan, stirring constantly as it cooks for an additional 1-2 minutes until you achieve a creamy custard texture.
- Remove from heat and let cool for a minute. Top with your favorite fruits, nuts, or sweet spices and enjoy warm.
Notes
