  1. In a medium saucepan, combine the rolled oats, milk, and a pinch of salt. Bring to a gentle boil over medium heat, stirring occasionally to avoid sticking.
  2. Once boiling, reduce heat to low and let it simmer gently for about 5 minutes, stirring often until it thickens to your desired consistency.
  3. While the oats simmer, whisk the eggs, maple syrup, and vanilla in a small bowl until well combined.
  4. Slowly add a ladleful of the hot oatmeal mixture into the egg mixture while continuously whisking to prevent the eggs from scrambling.
  5. Pour the egg mixture back into the saucepan, stirring constantly as it cooks for an additional 1-2 minutes until you achieve a creamy custard texture.
  6. Remove from heat and let cool for a minute. Top with your favorite fruits, nuts, or sweet spices and enjoy warm.

Notes

For seasonal twists, consider adding nutmeg or pumpkin spice during the fall. Leftovers can be stored in an airtight container in the fridge for up to three days, or frozen for longer storage. Reheat with a splash of your favorite milk.
