  • 6 cups day-old bread, cut into 1/2-inch cubes Sourdough, French, whole wheat—stale or fresh is fine. Day-old bread absorbs flavor without becoming gummy.
  • 3 tablespoons olive oil or melted butter Olive oil keeps it lighter; butter gives a more indulgent treat.
  • 1 teaspoon kosher salt Balances the flavors.
  • 1/2 teaspoon freshly ground black pepper Brightens the seasoning.
  • 1 teaspoon garlic powder or 2 cloves fresh garlic, minced Fresh garlic yields a more vibrant, aromatic crouton.
  • 1 teaspoon dried Italian herbs or 1 tablespoon chopped fresh herbs Swap herbs seasonally for a festive twist.
  • 1/4 cup grated Parmesan cheese (optional) Adds savory richness and a golden crust.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Place the bread cubes in a large bowl. If your bread is too fresh, toast the cubes briefly first to dry them a bit.
  3. In a small bowl, whisk together olive oil, salt, pepper, garlic powder or minced garlic, and dried herbs. If using Parmesan, add it to the mixture.
  4. Pour the oil-herb mixture over the bread cubes. Toss gently until every cube is lightly coated.
  5. Spread the coated cubes in a single layer on the prepared baking sheet.
Cooking
  1. Bake for 12–20 minutes, stirring once halfway through, until deep golden color and firm texture.
  2. Remove the croutons and let them cool completely on the baking sheet; they will crisp up further as they cool.

Notes

For a healthier option, use whole-grain bread and reduce oil by a tablespoon; toss with spray oil for even coverage. Garlic lovers can use roasted garlic for sweetness. For a cheesy flavor, add Parmesan in the last 5 minutes of baking.
