Preparation
- Heat a splash of olive oil in a large skillet over medium-high heat until shimmering.
- Season the beef with salt and pepper, then add it to the skillet and sear until browned on all sides (about 3-4 minutes).
- Remove the beef from the skillet and set aside. In the same pan, sauté the diced onion and sliced mushrooms until soft and golden brown (about 5 minutes).
- Add minced garlic and flour, stirring for about a minute to cook the flour slightly.
- Gradually pour in the beef broth while stirring to prevent lumps and bring to a gentle simmer until the sauce thickens.
- Return the beef to the skillet, stir in Worcestershire sauce, and let bubble for a minute, then remove from heat.
- Add sour cream and stir gently until incorporated. Adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
Notes
For added depth of flavor, consider adding white wine in step 5. Can be made lighter using low-fat sour cream or Greek yogurt. For variation, add spinach or peas, or spice it up with paprika or cayenne pepper.
