  • 1 pound beef (sirloin or any tender cut)
  • 1 medium onion, diced
  • 2 cups mushrooms, sliced (cremini or button)
  • 2 cloves garlic, minced
  • 1 tablespoon flour (or cornstarch for gluten-free)
  • 1 cup beef broth Use high-quality for better flavor.
  • 1 cup sour cream (or Greek yogurt) For a healthier twist.
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Fresh parsley, for garnish

Method
 

Preparation
  1. Heat a splash of olive oil in a large skillet over medium-high heat until shimmering.
  2. Season the beef with salt and pepper, then add it to the skillet and sear until browned on all sides (about 3-4 minutes).
  3. Remove the beef from the skillet and set aside. In the same pan, sauté the diced onion and sliced mushrooms until soft and golden brown (about 5 minutes).
  4. Add minced garlic and flour, stirring for about a minute to cook the flour slightly.
  5. Gradually pour in the beef broth while stirring to prevent lumps and bring to a gentle simmer until the sauce thickens.
  6. Return the beef to the skillet, stir in Worcestershire sauce, and let bubble for a minute, then remove from heat.
  7. Add sour cream and stir gently until incorporated. Adjust seasoning if needed.
  8. Serve hot, garnished with fresh parsley.

Notes

For added depth of flavor, consider adding white wine in step 5. Can be made lighter using low-fat sour cream or Greek yogurt. For variation, add spinach or peas, or spice it up with paprika or cayenne pepper.
