- In a mixing bowl, soften the cream cheese until creamy.
- Add the sour cream and blend them together until smooth.
- Sprinkle in the ranch seasoning mix; stir well to distribute.
- Incorporate the can of Rotel tomatoes, juices included.
- Gradually fold in the shredded cheddar cheese.
- If adding, fold in the diced bell peppers (or jalapeƱos).
- Transfer the mixture to a serving bowl, cover, and chill in the fridge for at least 15 minutes.
Notes
Use Greek yogurt instead of sour cream for a lighter dip. Improve flavor with fresh herbs; consider adding shredded rotisserie chicken for protein.
