Ingredients

Pasta and Base Ingredients
  • 8 oz Elbow macaroni Feel free to use any pasta shape you prefer.
  • 2 tbsp Butter Lends creaminess to the sauce.
  • 2 tbsp All-purpose flour To thicken the cheese sauce.
  • 2 cups Whole milk Can use low-fat for a lighter option.
  • 1 tbsp Nutritional yeast For a cheesy flavor without dairy.
  • 1 tsp Mustard powder Enhances overall flavor.
  • 1 tsp Garlic powder Enhances overall flavor.
Cheese Blend
  • 1 cup Sharp cheddar cheese (shredded) Provides amazing flavor.
  • 1 cup Mozzarella cheese (shredded) For elasticity.

Method

Preparation
  1. In a large pot, bring salted water to a boil. Add your pasta and cook until al dente. Drain and set aside.
  2. In the same pot, melt the butter over medium heat. Whisk in the flour and cook for about 2 minutes until it turns golden.
  3. Gradually stir in the milk, whisking continuously to prevent lumps. Cook until the mixture thickens and bubbles.
  4. Lower the heat and add your cheese blend gradually, stirring constantly until melted and creamy.
  5. Mix in the cooked pasta, ensuring each piece is coated in that delicious, cheesy sauce.
  6. Spoon the mac and cheese into bowls and garnish with extra cheese or breadcrumbs if desired.

Notes

Feel free to get creative with your mac and cheese! Add veggies, protein options, or change up the cheese to make it your own. Cook the pasta al dente to prevent it from becoming mushy.
