  • 1 packet Italian dressing mix For that quintessential flavor.
  • 1 cup beef broth Add richness; you can use homemade, store-bought, or even bone broth for a boost!
  • 1 cup pepperoncini peppers These add a delightful tang; swap them with banana peppers for milder flavor.
  • 1 large onion, sliced Optional, for sweetness.
  • 3-4 cloves garlic, minced The more, the merrier!
  • to taste Salt
  • to taste Pepper
  • 8 rolls Crusty Italian rolls For serving; grab fresh bakery rolls for the best experience!

Method

Preparation
  1. Season your chuck roast with salt and pepper, then place it in the slow cooker.
  2. In a bowl, combine the Italian dressing mix with beef broth. Pour this flavorful mixture over the beef.
  3. Scatter the sliced onion and minced garlic (if using) around the roast, then add the pepperoncini peppers right on top.
Cooking
  1. Cover the slow cooker and set it to low for 7–8 hours or high for 4 hours. The goal is tender, pull-apart beef that’s infused with incredible flavors.
  2. Once cooked, remove the beef from the slow cooker and shred with two forks. Return the shredded beef back to the cooker to soak up all that tasty liquid.
Assembly
  1. Slice your crusty Italian rolls in half and load them up with the juicy beef. Optionally, spoon some of the broth from the slow cooker over the sandwich for extra flavor.

Notes

This recipe is ideal for meal prepping, allowing you to pop the ingredients in the slow cooker in the morning and come home to a deliciously aromatic kitchen after a long day.
