Preparation
- Season your chuck roast with salt and pepper, then place it in the slow cooker.
- In a bowl, combine the Italian dressing mix with beef broth. Pour this flavorful mixture over the beef.
- Scatter the sliced onion and minced garlic (if using) around the roast, then add the pepperoncini peppers right on top.
Cooking
- Cover the slow cooker and set it to low for 7–8 hours or high for 4 hours. The goal is tender, pull-apart beef that’s infused with incredible flavors.
- Once cooked, remove the beef from the slow cooker and shred with two forks. Return the shredded beef back to the cooker to soak up all that tasty liquid.
Assembly
- Slice your crusty Italian rolls in half and load them up with the juicy beef. Optionally, spoon some of the broth from the slow cooker over the sandwich for extra flavor.
