Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment for easy removal.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
Mixing
- In a large bowl, whisk the melted butter and sugar until glossy. Add the eggs one at a time, then stir in the mashed bananas, vanilla, and Greek yogurt.
- Fold the dry ingredients into the wet until just combined. Add nuts or chocolate chips if using.
Baking
- Pour the batter into the prepared pan and smooth the top. Bake for 50-65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Cool the loaf in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a healthier twist, replace half the butter with mashed avocado. Add a streusel topping for a coffee-cake vibe. Make mini loaves or muffins: bake for 18–22 minutes for muffins.
