Preparation
- Preheat your oven to 350°F (175°C). Your kitchen will smell amazing in no time!
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
- In a large bowl, mix the granulated sugar and vegetable oil until well combined.
- Add the egg, vanilla extract, and food coloring to the wet mixture. Whisk until smooth and vibrant.
- Gradually stir in the dry mix until just combined, being careful not to overwork the dough.
- Chill the dough in the refrigerator for about 10 minutes. This helps enhance the flavors and makes it easier to roll.
Baking
- Scoop tablespoon-sized portions of dough and roll them into balls. Then roll each ball in powdered sugar until generously coated.
- Place the dough balls on a lined baking sheet, spacing them a couple of inches apart.
- Bake for 10-12 minutes or until the edges start to set but the centers are still slightly soft—this is key for that chewy texture!
- Cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Store cookies in an airtight container at room temperature for up to a week. These cookies freeze well; layer between parchment paper in a freezer-safe container for up to three months.
