  • 1 can (16 oz) Rotel tomatoes Use mild, original, or hot depending on spice preference.
  • 1 block (8 oz) cream cheese For a lighter option, swap in Greek yogurt.
  • 2 cups shredded cheddar cheese Sharp or mild, feel free to experiment with other cheese blends.
  • 1 lb ground beef or sausage Turkey can be used for a healthier twist.
Optional Toppings
  • Chopped green onions Add extra flavor and color.

Method
 

Cooking
  1. In a large skillet over medium heat, add the ground beef (or sausage) and cook until it’s no longer pink, breaking it up as it cooks.
  2. Drain the excess fat from the skillet and return it to the stove.
  3. Lower the heat and add the block of cream cheese to the skillet, stirring occasionally until it melts completely.
  4. Pour in the can of Rotel tomatoes, juices and all, stirring until everything is combined and heated through.
  5. Gradually mix in the shredded cheddar cheese until it melts beautifully into the dip.
  6. Remove from heat and transfer the dip to a serving bowl. Add any optional toppings you desire!

Notes
