- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the ground beef, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
- Toss in the diced onion, bell pepper (if using), and minced garlic. Sauté until soft, about 3 minutes.
- Stir in the Spanish Rice A Roni, allowing it to toast slightly for about 1 minute.
- Add the diced tomatoes (with juice) and chicken broth, stirring everything together.
- Sprinkle in cumin, paprika, and chili powder. Bring the mixture to a boil, then cover and reduce heat to low.
- Let it simmer for 15 minutes until the rice is cooked and fluffy.
- Fluff the rice with a fork, serve in bowls, and enjoy.
Notes
Consider adding beans for extra protein and fiber, or garnish with fresh herbs. You can also use turkey for a leaner version or make it vegetarian with lentils.
