  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese Optional for a touch of indulgence
  • 3 large eggs Bring to room temperature for smoother batter
  • 1/2 cup milk Dairy or plant-based
  • 1/4 cup olive oil Or melted butter for a richer flavor
  • Fresh herbs Like chives or parsley, optional for a touch of freshness

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease and flour a muffin tin or line it with paper liners.
  3. In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, and Parmesan cheese.
  4. In a separate bowl, beat the eggs, milk, and olive oil. Stir in the mashed cauliflower.
  5. Gradually fold the wet ingredients into the dry mixture.
  6. Spoon the mixture into the prepared tin, filling each cup about 2/3 full.
  7. Place in the oven and bake for 15-20 minutes or until tops are lightly golden.
  8. Allow the muffins to cool in the pan for about 5 minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Freeze individually wrapped muffins for up to 2 months.
