Preparation
- Preheat your oven to 375°F (190°C).
- Grease and flour a muffin tin or line it with paper liners.
- In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, and Parmesan cheese.
- In a separate bowl, beat the eggs, milk, and olive oil. Stir in the mashed cauliflower.
- Gradually fold the wet ingredients into the dry mixture.
- Spoon the mixture into the prepared tin, filling each cup about 2/3 full.
- Place in the oven and bake for 15-20 minutes or until tops are lightly golden.
- Allow the muffins to cool in the pan for about 5 minutes before transferring to a wire rack.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Freeze individually wrapped muffins for up to 2 months.
