  • 8 large large eggs Farm-fresh eggs can enhance flavor.
  • 2 cups milk Whole milk provides creaminess, low-fat or almond milk can be used for a lighter version.
  • 4 slices bread Stale bread works best; sourdough or whole-grain adds depth and nutrition.
  • 1 cup cheese (cheddar or mozzarella) Feel free to mix your favorites!
  • 1 cup mixed vegetables (spinach, bell peppers, onions) Fresh veggies contribute texture and flavor; frozen works if fresh are out of season.
  • 1 tsp garlic powder Fresh garlic can add a delightful aromatic quality.
  • to taste salt and pepper Essential for bringing the flavors together.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cut the bread into small cubes and place them in a greased 9x13 baking dish.
  3. In a large bowl, beat the eggs with the milk and add garlic powder, salt, and pepper.
  4. In a pan over medium heat, sauté the chopped vegetables for roughly 5 minutes until tender.
  5. Layer half of the sautéed veggies over the bread cubes, followed by half of the cheese. Pour half of the egg mixture over the layers. Repeat the process with the remaining ingredients, ending with cheese on top.
  6. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the top is golden brown.
  7. Once out of the oven, allow it to sit for about 10 minutes before cutting.

Notes

For a wholesome twist, substitute some of the milk with Greek yogurt for added protein. Serve alongside a fresh salad for a great meal.
