- Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve about 1 cup of the pasta water before draining the pasta.
- In a large skillet over medium heat, melt the butter until it begins to bubble and become fragrant.
- Add the minced garlic to the melted butter and sauté for about 1-2 minutes until fragrant but not browned.
- Lower the heat and add the drained pasta to the skillet. Toss gently until the pasta is well-coated with garlic butter.
- Add the brie pieces and stir until they begin to soften and melt into the pasta, creating a creamy sauce.
- If the pasta seems dry, gradually add the reserved pasta water until reaching the desired consistency.
- Sprinkle in the salt, black pepper, and red pepper flakes. Stir well to combine the flavors, adjusting seasoning to taste.
- Garnish with fresh parsley and serve hot.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over low heat with a splash of water or butter for the best texture.
