  • 12 oz pasta of your choice Spaghetti or fettuccine work well
Sauce Ingredients
  • 1 cup brie cheese, rind removed and chopped
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced Add more if you love garlic
  • 1/2 teaspoon salt More to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes For a little kick
  • Fresh parsley, chopped For garnish
  • 1 cup spinach or cherry tomatoes Optional for a healthier twist

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve about 1 cup of the pasta water before draining the pasta.
  2. In a large skillet over medium heat, melt the butter until it begins to bubble and become fragrant.
  3. Add the minced garlic to the melted butter and sauté for about 1-2 minutes until fragrant but not browned.
  4. Lower the heat and add the drained pasta to the skillet. Toss gently until the pasta is well-coated with garlic butter.
  5. Add the brie pieces and stir until they begin to soften and melt into the pasta, creating a creamy sauce.
  6. If the pasta seems dry, gradually add the reserved pasta water until reaching the desired consistency.
  7. Sprinkle in the salt, black pepper, and red pepper flakes. Stir well to combine the flavors, adjusting seasoning to taste.
  8. Garnish with fresh parsley and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over low heat with a splash of water or butter for the best texture.
