Preparation
- Pat the chicken dry and season generously with salt, pepper, smoked paprika, and thyme.
- In a small bowl, mix the minced garlic with the butter to carry the aroma.
- Place the seasoned chicken in the crockpot and pour the chicken broth around it.
- Dot the garlic butter pats across the chicken.
Cooking
- Cover and cook on low for 6 hours.
- At the 5-hour mark, your kitchen will smell amazing.
- When done, remove the chicken and set it aside.
- If needed, stir in the cornstarch slurry and cook on high for 5–10 minutes for a thicker sauce.
- Return the chicken to the crockpot, coat it in the sauce, and garnish with parsley and Parmesan.
Notes
For a dairy-free version, use olive oil instead of butter and nutritional yeast instead of Parmesan. Serve over mashed potatoes or keep it light with a salad.
