  • 2 pounds boneless skinless chicken thighs or breasts Thighs stay juicier; breasts are a leaner option.
  • 6 tablespoons unsalted butter, cut into pats For the rich garlic butter glaze.
  • 6 cloves garlic, minced The star aroma.
  • 1 cup low-sodium chicken broth Keeps the chicken tender and creates a silky sauce.
  • 1/2 cup grated Parmesan cheese Adds savory, slightly salty depth.
  • 1 teaspoon smoked paprika Gives warmth and color.
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves Provides earthy brightness.
  • 1/2 teaspoon red pepper flakes, optional Adds gentle heat.
  • Salt and freshly ground black pepper, to taste.
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (optional) For a thicker sauce.
  • Fresh parsley, chopped, for garnish For color and fresh flavor.

Method
 

Preparation
  1. Pat the chicken dry and season generously with salt, pepper, smoked paprika, and thyme.
  2. In a small bowl, mix the minced garlic with the butter to carry the aroma.
  3. Place the seasoned chicken in the crockpot and pour the chicken broth around it.
  4. Dot the garlic butter pats across the chicken.
Cooking
  1. Cover and cook on low for 6 hours.
  2. At the 5-hour mark, your kitchen will smell amazing.
  3. When done, remove the chicken and set it aside.
  4. If needed, stir in the cornstarch slurry and cook on high for 5–10 minutes for a thicker sauce.
  5. Return the chicken to the crockpot, coat it in the sauce, and garnish with parsley and Parmesan.

Notes

For a dairy-free version, use olive oil instead of butter and nutritional yeast instead of Parmesan. Serve over mashed potatoes or keep it light with a salad.
