  • 3 tablespoons olive oil Extra virgin is best for rich flavor.
  • 4 cloves fresh garlic, minced Adjust according to your love for garlic.
  • 2 tablespoons fresh herbs (chopped rosemary and parsley) Thyme is also a great choice.
  • to taste salt A good pinch elevates the flavors.
  • to taste pepper A good pinch elevates the flavors.
  • 1 piece lemon For zest, if you’re feeling adventurous!

Preparation
  1. Preheat the Oven: Set your oven to 425°F (220°C) and let it get nice and hot.
  2. Prep the Potatoes: Rinse the baby potatoes well and cut them in half. If you’re using larger potatoes, chop them into bite-sized pieces.
  3. Seasoning Time: In a large bowl, combine the potatoes with olive oil, minced garlic, fresh herbs, salt, and pepper. Make sure every potato piece gets a generous coating.
Cooking
  1. Spread the Love: Transfer the seasoned potatoes to a baking sheet lined with parchment paper. Spread them out in a single layer.
  2. Roast: Bake in your preheated oven for 30-35 minutes, or until they are crispy on the outside and tender on the inside. Give them a little shake halfway through for even cooking.
  3. Serve and Savor: Once delightfully golden, remove from the oven and serve warm. Garnish with extra herbs or a squeeze of fresh lemon juice if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C). These can also be frozen for up to a month.
