Preparation
- Preheat the Oven: Set your oven to 425°F (220°C) and let it get nice and hot.
- Prep the Potatoes: Rinse the baby potatoes well and cut them in half. If you’re using larger potatoes, chop them into bite-sized pieces.
- Seasoning Time: In a large bowl, combine the potatoes with olive oil, minced garlic, fresh herbs, salt, and pepper. Make sure every potato piece gets a generous coating.
Cooking
- Spread the Love: Transfer the seasoned potatoes to a baking sheet lined with parchment paper. Spread them out in a single layer.
- Roast: Bake in your preheated oven for 30-35 minutes, or until they are crispy on the outside and tender on the inside. Give them a little shake halfway through for even cooking.
- Serve and Savor: Once delightfully golden, remove from the oven and serve warm. Garnish with extra herbs or a squeeze of fresh lemon juice if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C). These can also be frozen for up to a month.
