- In a large bowl, combine the minced garlic, lemon juice, lemon zest, olive oil, oregano, salt, and pepper. Add the chicken breasts and coat them thoroughly in the marinade. Let it sit for at least 15 minutes (or up to 2 hours in the fridge).
Cooking
- Heat a large skillet over medium-high heat.
- Add the marinated chicken breasts to the skillet and cook for about 6–7 minutes on each side, or until the chicken is golden brown and cooked through.
- Once the chicken is nearly cooked, pour the remaining marinade into the pan and cook for an additional 2–3 minutes.
- Remove from heat and sprinkle fresh parsley on top.
Notes
For healthier swaps, substitute olive oil with Greek yogurt. For a festive version, add honey or maple syrup. For variations, incorporate cumin or paprika for a Mediterranean flair.
