  • 4 pieces boneless, skinless chicken breasts Feel free to use thighs for a richer flavor.
  • 4 cloves garlic, minced This adds an aromatic kick.
  • 2 pieces lemons, juiced Fresh is best, but bottled will work too.
  • 1 piece lemon, zested This adds a bright, citrusy punch.
  • 1/4 cup olive oil Can substitute with melted butter for indulgence.
  • 1 teaspoon dried oregano Use fresh if available for better flavor.
  • Salt and pepper, to taste
  • Fresh parsley, chopped For garnish and a lovely pop of color.

Method
 

Preparation
  1. In a large bowl, combine the minced garlic, lemon juice, lemon zest, olive oil, oregano, salt, and pepper. Add the chicken breasts and coat them thoroughly in the marinade. Let it sit for at least 15 minutes (or up to 2 hours in the fridge).
Cooking
  1. Heat a large skillet over medium-high heat.
  2. Add the marinated chicken breasts to the skillet and cook for about 6–7 minutes on each side, or until the chicken is golden brown and cooked through.
  3. Once the chicken is nearly cooked, pour the remaining marinade into the pan and cook for an additional 2–3 minutes.
  4. Remove from heat and sprinkle fresh parsley on top.

Notes

For healthier swaps, substitute olive oil with Greek yogurt. For a festive version, add honey or maple syrup. For variations, incorporate cumin or paprika for a Mediterranean flair.
