Marination
- In a bowl, mix olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Add chicken thighs, ensuring they’re well coated. Cover and let marinate for at least 30 minutes, or overnight for deeper flavor.
Grilling or Cooking
- Preheat your grill or skillet to medium-high heat.
- Cook the marinated chicken on the grill for about 6-7 minutes on each side until its internal temperature reaches 165°F, or sear it on a skillet until golden brown.
Assembling
- Once cooked, let the chicken rest for several minutes before slicing it into thin strips.
- To serve, place chicken strips on a warm pita, add a dollop of tzatziki sauce, and layer with fresh veggies. Roll it up and enjoy!
