- In a large bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add the chicken, ensuring every piece is well-coated. Cover and refrigerate for at least 30 minutes.
- If you’re using wooden skewers, soak them in water to prevent burning on the grill.
- Thread the marinated chicken onto the skewers, interspersed with colorful chunks of bell pepper and red onion.
Cooking
- Preheat your grill to medium-high heat.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has beautiful grill marks.
Serving
- Once perfectly grilled, remove the kabobs from the skewers and serve them warm.
Notes
