For the marinade
  • 1 cup Greek yogurt Tenderizes the chicken

For the kabobs
  • 1 pound Chicken breast, cut into chunks Main protein for the kabobs
  • 1 medium Bell pepper, cut into chunks Adds color and sweetness

Method
 

Preparation
  1. In a large bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add the chicken, ensuring every piece is well-coated. Cover and refrigerate for at least 30 minutes.
  2. If you’re using wooden skewers, soak them in water to prevent burning on the grill.
  3. Thread the marinated chicken onto the skewers, interspersed with colorful chunks of bell pepper and red onion.
Cooking
  1. Preheat your grill to medium-high heat.
  2. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has beautiful grill marks.
Serving
  1. Once perfectly grilled, remove the kabobs from the skewers and serve them warm.

Notes

For best flavor, marinate the chicken longer than 30 minutes if possible. Serve with tzatziki sauce and sides like Greek salad, rice, or pita.
