  • 1 pound ground beef or lamb Use ground turkey for a lighter option.
  • 1 cup plain breadcrumbs Whole wheat breadcrumbs can be used for a healthier alternative.
  • ½ cup crumbled feta cheese Provides a tangy, creamy flavor.
  • 2 cloves minced garlic Fresh garlic is best; garlic powder works in a pinch.
  • 1 large egg To bind the mixture; can substitute with flaxseed meal mixed with water.
  • salt & pepper For seasoning.
Herbs and Spices
  • a generous handful fresh herbs (parsley or dill) Dried herbs can be used as a substitute.

Preparation
  1. Gather all your ingredients to streamline the cooking process.
  2. In a large bowl, combine ground meat, breadcrumbs, feta cheese, minced garlic, fresh herbs, egg, salt, and pepper. Mix gently with your hands until just combined.
  3. Form the mixture into balls about the size of a golf ball.
Cooking
  1. Heat a couple tablespoons of olive oil in a large skillet over medium heat.
  2. Add the meatballs in batches and cook for about 6-8 minutes, turning occasionally, until golden brown on all sides and fully cooked through.
  3. Transfer the cooked meatballs to a serving platter and drizzle with lemon olive oil and garnish with fresh herbs.

Notes

For added flavor, consider a dash of cumin or mix in ground pork. For gluten-free options, substitute oats for breadcrumbs.
