Ingredients

Main Ingredients
  • 1 cup Greek yogurt Use good quality for the best flavor.
  • 1 medium cucumber Grated and drained.
  • 2 cloves garlic Minced.
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar For tang.
  • Salt and pepper To taste.

Method

Preparation
  1. Start by grating the cucumber on a box grater. Place the grated cucumber in a fine mesh strainer or cheesecloth, sprinkle with a bit of salt, and let it sit for about 5 minutes to drain off excess water.
  2. In a medium bowl, add 1 cup of Greek yogurt.
  3. Mince the garlic and add it to the yogurt, followed by 1 tablespoon of olive oil.
  4. Squeeze the grated cucumber to remove any remaining moisture, then fold it into the yogurt mixture.
  5. Add 1 tablespoon of red wine vinegar, salt, and pepper to taste, stirring to combine.
  6. For the best flavor, let your Tzatziki chill in the refrigerator for at least an hour before serving.

Notes

To store, place in an airtight container in the refrigerator. It lasts up to three days, though it rarely lasts that long. Freezing is not recommended. Consider adding herbs like dill or mint for variations.
