Ingredients
  

For the Kabobs
  • 1.5 lbs Chicken Breast Juicy and tender; can substitute with boneless thighs.
  • 1 red Bell Pepper For color and sweetness.
  • 1 yellow Bell Pepper For color and sweetness.
  • 1 green Bell Pepper For color and sweetness.
  • 1 large Red Onion Adds crunch and sweetness; can substitute with sweeter onion.
  • 4 cloves Garlic, minced Enhances flavors.
  • 1/4 cup Olive Oil For marinating.
  • 1 lemon Lemon Juice, from Adds brightness.
  • 2 tablespoons Dijon Mustard For tang.
  • 1 tablespoon Oregano Fresh or dried, to taste.
  • 1 tablespoon Thyme Fresh or dried, to taste.
  • 1 tablespoon Parsley Fresh or dried, to taste.
  • Salt and Pepper To taste.

Method
 

Preparation
  1. Cut the chicken breasts into 1.5-inch cubes.
  2. In a large bowl, whisk together olive oil, lemon juice, minced garlic, Dijon mustard, and herbs.
  3. Add chicken cubes to the bowl, season with salt and pepper, and coat well. Refrigerate for at least 15 minutes.
  4. Cut the bell peppers and red onion into chunks similar in size to the chicken.
Grilling
  1. Thread marinated chicken, bell peppers, and onion onto skewers, alternating ingredients.
  2. Preheat grill to medium-high heat. Grill skewers for about 10-12 minutes, turning occasionally until chicken is cooked through.
  3. Remove from grill and serve on a platter.

Notes

For extra flavor, try adding fresh basil or cilantro to the marinade. Serve with couscous, salad, or pita bread.
