Method
 

Preparation
  1. In a mixing bowl, combine the juice of two fresh lemons, olive oil, minced garlic, dried oregano, salt, and pepper. Stir well.
  2. Add the chicken breasts to the marinade, ensuring they’re well-coated. Allow them to soak for at least 15 minutes (or up to 24 hours in the fridge for deeper flavor).
Grilling
  1. While the chicken marinates, heat your grill to medium-high.
  2. Place the marinated chicken on the grill and grill for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  3. Once done, remove the chicken from the grill and let it rest for a few minutes.
Serving
  1. Sprinkle freshly chopped parsley on top for a pop of color and flavor before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days. For longer storage, freeze the cooked chicken in a freezer-safe bag for up to 3 months. Reheat in the oven at 350°F (175°C) for 15-20 minutes.
