Preparation
- In a mixing bowl, combine the juice of two fresh lemons, olive oil, minced garlic, dried oregano, salt, and pepper. Stir well.
- Add the chicken breasts to the marinade, ensuring they’re well-coated. Allow them to soak for at least 15 minutes (or up to 24 hours in the fridge for deeper flavor).
Grilling
- While the chicken marinates, heat your grill to medium-high.
- Place the marinated chicken on the grill and grill for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Once done, remove the chicken from the grill and let it rest for a few minutes.
Serving
- Sprinkle freshly chopped parsley on top for a pop of color and flavor before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 4 days. For longer storage, freeze the cooked chicken in a freezer-safe bag for up to 3 months. Reheat in the oven at 350°F (175°C) for 15-20 minutes.
